My recipe: Purslane stir-fry....

Purslane or pigweed (Portulaca) is an emerging vegetable...
Earlier, it was thought to be an weed..but now, its nutritional value has been well-appreciated...
From the Sunday farmer market, I got  a bunch of the leafy greens.......

Planted some of the plump stalks in my patio kitchen garden and used rest of them in stir-fry....

It was little slimy for the mucilages, but was tasty, worth incorporating to lunch platter again and again..
